What size speaker wire to use for the surrounds. They are about 20 ft from the receiver. Is 16 gauge big enough?

Here is the ubiquitous Wire Table that will show you that 16 gauge is fine for speakers of 4 to 8 ohm impedence at runs under 50 feet.
