The only triple I can think of is:
Terminator 2: VHS, Ultimate Ed, EXtreme Ed.

Alot of stuff I have bought twice on DVD:
The Breakfast Club -- The Breakfast Club HS Reunion Ed
Weird Science -- Weird Science HS Reunion Ed
Groundhog Day (not anamorphic) -- Groundhog Day SE
National Lampoon's Christmas Vacation foolscreen -- NL's Christmas Vacation SE WS
A Christmas Story -- A Christmas Story 2disc SE
Reservoir Dogs -- Reservoir Dogs SE

Oh and let it be known: I hate buying the same thing twice, but a bigger, badder, better version will usually lure me back in. Alot of titles I waited on until better releases came out (Stargate, Robin Hood: Prince of Thieves, Pulp Fiction - to name a few) and some I'm still waiting (Braveheart, Top Gun, Commando, Blade Runner).

On the plus side, my parents always end up with my unwanted 'castoffs'. For some reason they won't buy DVDs themselves and my father prefers foolscreen anyway. Weirdo.

There are far too many VHS tapes that I have upgraded to DVD to give a complete listing here but the couple I was the happiest with are:

Iron Eagle (just because), Beastmaster (just because x2), Sleeping Beauty (finally WS!), The Lion King: SE (amazing video/audio).

THE BLACK HOLE. I've double dipped on other things, but this takes the cake for sheer quantity.

Original Disney VHS- P&S

Widescreen VHS- Regular

Limited Edition Tin - Widescreen VHS

DVD

And i'll dip in a fifth time if Anchor Bay or SOMEBODY (Blue Underground maybe) does a Special Edition, or at least an anamorphic, remastered edition.

Metropolis: Madacy DVD and the Kino

Army of Darkness: Theatrical and Director's cut

Lord of the Rings (Fellowship and Two Towers): Theatrical and Extended Editions

The Toxic Avenger: Bought the Individual release, then the Tox Box.

X-Men: original and 1.5

Sleuth: original flipper and SE

A Bug's Life: original came with my computer. Recently bought the SE.

The most I've dipped into a single title is Terminator 2: Judgement Day

VHS Standard release
VHS Extended Edition (2-tape set)
DVD First Edition
DVD Ultimate Edition
DVD Extreme Edition

I am fairly certain that there won't be any more versions any time soon.

"The Nightmare Before Christmas": VHS (Di$ney delayed the LD release a year), CLV LD, CAV LD Box Set, DVD and DVD SE.

I'm looking forward to the day I'll get to 6th-dip this one when Di$ney finally releases a corrected 16:9 anamorphic edition with ALL of the extras that were included in the CAV LD box set.

My only double dip was replacing the Bruce Lee Master Collection with the Bruce Lee Ultimate Collection.

Only a few times. I double dipped for:

The Shawshank Redemption(updated to SE)
Willy Wonka And The Chocolate Factory(replaced fullscreen)
Jurassic Park(replaced fullscreen)

Lord Of The Rings Trilogy(bought both the regular and extended editions)
Fear And Loathing In Las Vegas(updated to the Criterion)

Gladiator(bought the extended set and kept old 2 disc set)
The Usual Suspects(updated to SE)
Alien and Aliens(kept the old discs and bought Alien Quadrilogy)
Young Guns(updated to SE)

Not exactly double dipping, but similar:

Akira(I bought the 2 disc set, my sister gave me the 1 disc DTs, so I kept both)
Hellboy(bought 2 disc set myself, got the extended set from mom)

Maybe it was more times than I thought. Still not that mch considering I have somewhere between 500 and 600 DVDs and DVD sets.

I've double/triple dipped on many, many other movies, so I'll think I'll just highlight the biggest amount of 'dips' on certain movies. Some dupes are replacements for worn out/broken/sold versions, and I no longer own certain copies of certain films, but below are the total number of purchases for some of my favourites.

I think Star Wars wins out with some 14 separate purchases, and Die Hard (my all time favourite movie) is close behind with 11. It's nuts I know, but I dig some movies so much that I HAVE to have the best version available, which is why I'm dreading the upcoming HD-DVD/Blu-ray onslaught. I just hope I can hold out! ;)

Die Hard: P/S VHS x2, W/S VHS, THX W/S VHS x2, PAL LD, dts NTSC LD, original R1 DVD, remastered R1 DVD, DVHS x2

The Terminator: P/S VHS, W/S THX NTSC LD x2, R2 DVD, R1 DVD

Terminator 2: P/S VHS, W/S VHS, PAL LD, original R1 DVD, Ultimate Edition R1 DVD, Extreme Edition R1 DVD, DVHS

Star Wars Trilogy: W/S VHS boxset, P/S remastered VHS, W/S remastered VHS, Executor W/S VHS boxset, THX W/S VHS boxset, SE W/S VHS boxset x3, Faces NTSC LD set, Definitive Collection NTSC LD boxset, PAL SE LD boxset, NTSC SE LD boxset, Japanese SE LD boxset, and of course the R1 DVD boxset

Alien: W/S VHS, THX W/S VHS, Facehugger box set W/S VHS, NTSC AC3 LD x2, original R1 DVD, quadrilogy version R1 DVD, DVHS

Aliens: P/S VHS, THX W/S VHS, Facehugger box set W/S VHS, PAL LD, AC3 NTSC LD x2, original R1 DVD x2, quadrilogy version R1 DVD

Phantom Menace: P/S VHS x2, W/S VHS, W/S VHS boxset, R2 DVD, R1 DVD, Japanese AC3 NTSC LD

Independence Day: PAL LD, dts NTSC LD, special edition NTSC LD, R2 DVD, remastered R2 DVD, DVHS

Halloween: Anchor Bay (AB) THX R1 DVD x2, AB 2-disc R2 DVD, AB 'Divimax' edition R1 DVD

Army of Darkness: AB theatrical edition R1 DVD, AB 'Bootleg' Director's Cut R1 DVD, AB 2-disc R2 DVD, MGM Director's Cut R3 DVD

Manhunter: AB 2-disc limited edition R1 DVD, UK theatrical version R2 DVD, AB Director's Cut 'Divimax' edition, MGM Japanese theatrical version R2 DVD

Dawn Of The Dead: Elite CAV NTSC LD boxset, AB original 'Theatrical' edition R1 DVD, Dutch 2-disc R2 DVD, UK 'Director's Cut' R2 DVD, French Argento's cut 2-disc R2 DVD, AB's 'Divimax' theatrical edition R1 DVD, AB's 4-disc Ultimate R1 DVD set.

Close Encounters of the 3rd Kind is top multi-dipper in my collection, 14 times since 1979, first bought on 8mm, last bought on SD-DVD. Next... HD-DVD?

I don't multi-dip as much as I used to, but the one title that I will continue to multi-dip, probably until I kick the bucket, is JAWS. Why stop after VHS, WS VHS, LD, boxed set LD, DD DVD, DTS DVD, and the recent release?:D

Star Wars Trilogy: VHS, WS CLV LD, LD CAV Box set, 1st DVD Box set

2001: VHS, Criterion CLV LD, MGM CAV LD, MGM Non-Amamorphic DVD, WHV DVD

Silverado: Criterion LD, First incorrectly-framed DVD, Second correctly-framed DVD, Collector's Edition DVD

Das Boot: Director's Cut DVD, Director's Cut Superbit DVD, Mini-series DVD

Lawrence of Arabia: WS VHS, Special Edition DVD, Superbit DVD

Jaws: Laserdisc, 25th Anv. DVD, 30th Anv. DVD.

Apollo 13: Laserdisc, DVD, Anv. Ed. DVD

Star Trek II: VHS, Laserdisc, DVD, Director's Cut DVD.

Probably every one of these is a candidate for another dip if and when they are released on BluRay.
