There is a cool version of Message In a Bottle by Sting on an album called Secret Policeman's Ball. It's probably on some other Sting CD's or videos as well. I also like Pete Townshend's accoustic work.

The best cover of an acoustic Led Zeppelin song is Over the Hills and Far Away by Mike Broadman. I keep forgetting the changes- it's quite embarrassing.

But the mother of all Zep acoustic tunes is White Summer.

Laurence Juber's acoustic guitar arrangement of "Strawberry Fields Forever" on his "Guitar Noir" DVD-A from AIX is just about the most beautiful thing I've heard on the instrument in years. The rest of the album is fantastic as well!
