I've seen vinyl-clad foam, rubber, and foam. Which is the best to use for my bedroom door to reduce sound from passing through?

Let me ask another question then: which one did you use?

I don't think that you will find that weatherstripping, by itself, will do much good in stopping sound transmission. If you can give more information about your situation, someone may be able to help. To actually answer your question, rubber is probably best.
