When you play a Blu-ray recorded with Dolby ATMOS on a 5.1 system, do you lose some of the dialogue coming from the center channel?

No, the 5.1 mix is still the same as before, Atmost just adds positional metadata for a system that can decode it, so it only adds, it never removes anything.
