I'd watch the whole thing. They are mostly standalone episodes, but they often have a common story 'arc' passing through them. Some episodes are completely arc based.
If you start watching following seasons, you'll start to get a bit confused with all the references unless you get a grounding now.

You DEFINATELY want to start with the first story! :) You miss that one, and EVERYTHING gets confusing later on!!!

Over half the episodes set up events in seasons 2 and 3, so if you plan on possibly watching those, I'd watch them all. The only thing I skip is most of episode 21, because it's the typical "Let's flash back to the whole season to save money" thing :)
