I've seen The Bird With The Crystal Plumage and Cat O' Nine Tails, and know I should see Suspiria, but what other Argento films are "essential"?

Can't go wrong with Deep Red.
Also check the sequel to Suspiria, Inferno.

I've seen The Bird With The Crystal Plumage and Cat O' Nine Tails

There are better Argento movies out there than The Cat O' Nine Tails.
The must see Argento films (excluding Suspiria ):
Deep Red, Tenebre, Opera.
Depending on if you like Argento or not after watching those four films:
Phenomena, The Stendhal Syndrome, Inferno (the follow up to Suspiria, I'm not a big a fan of it).
