I use a 27" Apex TV I just bought today for $200, and plan on getting a non progressive scan DVD player to play my DVDs (HT isn't my biggest hobby, most of my money goes to my aquariums). Do I still want to get widescreen version DVDs? All it will do is letterbox them right?

To answer your question, Yes. ALL it will do is show the movies in the original aspect ratio (letterbox).
I suggest you go to widescreen advocate and check out some of the examples which include this Star Wars example

Given the language of the HTF mission statement, you can be pretty sure that the answer you'll get here is "Yes".
