questions about Onkyo NR575 Atmos and speaker setup (2 Viewers)

I have a 2017 Onkyo NR575 receiver that allows for various speaker configurations, I currently have ceiling left and right speakers, 1x low center speaker, 1x subwoofer, 2 low side left and right speakers, and ceiling back left and right. I am not using the "height" speakers and the system does not allow me to use a configuration that is accurately portrayed based on ceiling mounting. Does Atmos require the "height" speakers and if there is not configuration setting to use all the speaker outputs can I still use the outputs (get power to them)...just wondering if I have the ability to connect more than the current 7 speakers and 1 subwoofer? thanks. Maybe recommendations for a receiver that would allow incorporation of 2 front and 2 back ceiling mounted speakers.

Your front left and right speakers are on or in the ceiling?

Yes the front left and right speakers are in the ceiling as well as two back surround speakers. The two side surround speakers are ear level, with subwoofer and center channel at floor level. The issue is the nr575 receiver configuration for 7.1 does not have ceiling mounted option....and the ceiling option 5.1 would preclude using side speakers.
