When watching tv if the channel has hd audio the front speakers do all the background sound and the center does the vocals, is this right? I'm new to this and I assumed they all played the words not just the center. Should the right and left front be picking some of them up? Or is this hooked up right?
When I switch to a channel where it has no hd audio, the center cuts off(receiver switches to stereo) and just the fronts play but now are also playing the words. Again not sure if this is standard or if I have something in the settings wrong.

That is how it is supposed to work. The center speaker is meant to take care of the vocals. That is what it was created for.
In your AVR when it switches to "stereo" (by the way it isn't "HD audio". It is 5.1), you can choose to use DPL instead.
Read your manual.
