Does anyone know of software for Windows that will playback SACDs in 5.1? I know there's software for DVD-Audio but I cannot find anything for SACDs.

NO, there isn't. A major selling point of SACD was its copy protection and its not able to be used on a PC. Perhaps, you MIGHT be able to get to the CD Layer, IF you use a CD drive only. But NO high resolution material!!!

You are correct. The hybird SACDs play fine as normal stereo CDs.
