I've got a Pioneer VSX-35TX, which has signal output for two center rear speakers. The trick is that you have to use another amp to power those speakers. My question is, would the volume level of those speakers (the center rears) be adjusted by the reciever's main volume control ... or would I always have to try to match the external amp's volume to that of the main 5.1 setup?

Your volume control on the Pioneer will adjust those with the other speakers. If you get an amp with gain control you can further adjust the volume for SPL if the Pioneer does not have DB controls for individual speakers. If it does then set the gain to max and control with Pioneer.
