HD audio, 5.1 analog outputs and 7.1 (1 Viewer)

Just wondering since I might go from 5.1 to 7.1, how does 5.1 outputs work with 7.1 system? Does the processor matrix the side surrounds into side+rear or will the rears be getting no signal?

What I have heard you need to get RCA Y cables to get the rear speakers on. In my case who cares still using DTS and their has been a lot of debates at AVS about the true Dolby Digital if it sounds better.
