For instance could I set contrast to 40 or would I just have to judge that a bar is at 40%?

No, they don't give numerical values. I have one and it's not too hard to guesstimate. When you select a particular item to adjust, the menu disappears and theres a bar of hashmarks at the bottom of the screen above the name of the item. It's fairly easy to remember which letter of the item name the correct setting lines up with.

The set won't remember settings on an input specific basis, but will remember a separate set for each picture mode (Pro, Movie, Standard, Vivid) so you can store one set of adjustments for dim lighting and another for daytime.

SVM has different fixed values for each mode, but can be changed or turned off fairly easily in the service menu.
