Could anyone explain to me roughly how much space a commentary track takes up on a dvd please?

That part is pretty easy. Most commentaries are recorded at a specified rate in 2-channel dolby surround. Find the data rate (probably 192 kbps I would suspect) and multiply is by the number of seconds of the movie. A good deal easier to calculate than the variable bit rate video.
