Mine would have to be that classic scene in Dawn of the Dead wherein a zombie gets the top of his head shaved off by whirling helicopter blades.

While my tastes in Horror films lean more towards sublime & gothic tales. For splatter I'd go with the already mentioned Alien chestburster or the Dawn of the Dead headshaver scenes. Most other pure splatter films do nothing for me so my exposure is rather limited.
