Does anybody know if an adapter is available to convert the DVI output from my Samsung HDTV set top box, to a firewire connection to go into my JVC D-VHS recorder??? Could such an adapter even work with the varying technologies?

No, you are asking for something to transform uncompressed, encrypted digital video (DVI/HDCP) back into compressed unencrypted video (Firewire). It's infeasible. HD MPEG-2 encoders are still way too expensive, and there's the copy protection issue.

If you want to record off of HD-DirecTV then wait a month for the HD-DVR250 Tivo model. Won't be able to archive to D-VHS though.
