In times past, I'd have answered this question like most here have and listed a ton of shows. But in my old age I've mellowed a bit and instead of being anxious for more, more, and more I've come to realize I have a pretty substantial library right now and that most of my favorites have been released. On top of that, Encore Westerns and other stations have given me access to very acceptable alts of many of my favorites. Sure, I guess I'd still purchase any one of several series I own in that category, but I really do have nice versions of certain important series that suit me just fine.
So with all that said, there's only one show that is an absolute "HOLY GRAIL" that I want badly, and that would be Ozzie and Harriet. If Sam can make that series a reality then anything else is just icing on the cake at this point.
Having said all that, here are some others I'd like to see (but will stop just short of calling them "Grail" shows because I've either got them in alt sets or see them as the less than essentials.
Lassie, Big Valley, the rest of Mr Peepers, In the Heat of the Night, My Three Sons, Barnaby Jones, and The Dakotas. This doesn't mean there aren't many other shows I'd like to see released and would buy, but I can't rightly call them holy grails. Heck, there are many older shows I'd pick up just to get Christmas episodes from. But that's way too long a list to start writing now.
