Usually, there is an option on the TV which tells you what kind of a signal the current input is showing. On my Mits. 55807, it's called simply 'Info'. When I select it (on the remote), I get either 480i, 480p, or 1080i (Mist. doesn't support 720p).
You're not alone Chris. I rented THPS4 (Xbox) and as hard as I've tried, I cannot get beyond the college level. I'm not buying it - which is good this way since I can go back and finish THPS3!!!
Make sure that you have the 720P setting in the Xbox dashboard set on 'Yes'. Also make sure that the Xbox is connected to the DTV input on your projector (not the 480p component connection). If the projector supports natively this resolution and can upgrade it to 1080i then it should work.

While racing, clicking 'start' gets you some options. One of them is "Camera" which you could set to 'wide'. That gives a wider view but is not a true 16x9.
