Here's one other point to consider...when I was having my issues, about half the time I'd select/look at a film like Encanto and in the description it would show as having Dolby Atmos. But the other half of the time it show as having just 5.1. Was driving me crazy.
Well, that particular HDMI Input is labeled "GAME" by Denon..but I wouldn't think they would want to limit audio capabilities of that input...would they?
The input into which I moved the cable was labeled "MEDIA PLAYER" by Denon.

I just did a ton of Google research on this subject. And it turns out this is (was) a thing. About a year or so ago, a ton of people showed up on the internet saying the same thing, that they could no longer get Dolby Atmos from Disney+ via Apple 4k TV. They could get it fine using the app...

I replaced all four HDMI cables in my HT. They connect my Oppo 203, Arris Cable Box (Spectrum), and my Apple TV 4k to my Denon 3600X and my Denon to my new TCL 4kTV (55S535)...
