Hmm. This makes me feel I need to re-read some old stuff. My recollection is that I had very little use for Gwen Stacy in the earliest high school years, and then by the end I felt that way too. Maybe I'm forgetting a middle part where they tried to develop her character in an interesting way...

Gwen Stacy's death was explained 4 months after the original issue in the letters page. When Spider-Man's caught her suddenly and pulled her up, this created a fatal whiplash effect.

Raimi just blipped over some awfully important years, eh? At least for us original readers of 30+ years ago. Is he setting up MJ as a stand-in for Gwen Stacy? Will Harry as the Green Goblin kill her in 3? The final shot of her in 2 was a fairly ominous conclusion.
