    So easy and so delicious! Baked avocados with egg, topped with salsa, roasted Hatch chilies, homegrown cilantro. Definitely use medium eggs unless the avocados are REALLY big.

    Made one of my all-time favorite dishes for the first time tonight: Chicken Picatta. It's incredibly easy, really, but I did learn a few things that I will do differently next time. And there WILL be a next time!

    Tonight's dinner: homemade mac and cheese (first time!) that I spiced up a bit. Used shredded Mexican cheese blend, green chilies, cumin and chili powder in the sauce. Sautéed some chorizo and added it to the pasta before stirring in the cheese sauce. Muy delicioso!

    My first attempt at Carne Asada on my new cast iron stovetop grill. The meat was EXCELLENT and I really enjoyed the marinade recipe I found for it. A good friend teaches at Cordon Bleu in Atlanta and gave me a DELICIOUS way to "doctor" refried beans! Tonight, the leftovers as a burrito!
