Hello,
Do the latest 5.1 receivers allow you to just have the front L/R and a Center along with a Sub and not use the rear surround speakers?

The system would be in a small bedroom and there really isn't room for rear surround speakers. There's no way for them to be behind me, at best they would be parallel to my viewing/listening position.

Yes is the answer to the first question. Just so you know, he rear surrounds don't have to be behind you. There is nothing wrong with mounting them on the side walls. You might be surprised how well you like them.

The surround speakers are not "rear" speakers. They are intended to be placed to your sides, preferably high up (within about a foot or so of a typical ceiling). You will get a much better surround effect out of a 5.1 (or 7.1, or plain old Dolby pro-logic) surround system with the speakers located properly, which is at the sides. You should also avoid pointing them directly at the listeners, in order to reduce their localisation. Try pointing them at each other, i.e. directly across the room. Another option is to use dipole speakers.

Ahh, OK. In any case, the bedroom is a pretty small space and the layout would make installing the surround speakers nearly impossible.

Never say never, or nearly impossible in this case. You'd be amazed how easy it is once you decide to do it.
