Also, from the plates we've seen on the show, it seems to me that the portion sizes of the dishes are actually pretty hefty. The risotto in particular looks quite filling, as does the beef wellington (if you can manage to get one that isn't burnt ).
Not to appear to be harping on you (I'm really not trying to!), but another aspect of fine dining is that traditionally your meals come VERY fast, despite the debacles on Hell's Kitchen. Generally speaking, you should be getting your appetizer about 15 minutes after you order, and your entree...
To be fair, it's pretty much a given that if you are eating food portioned as seen in Scott's picture, there is often multiple courses. Generally in "fine dining," the goal isn't to cram as much food of a single type (or whatever) onto a single plate, but to spread the meal out over courses...
Chef de Cuisine is essentially the same as executive chef, at least in most kitchens. My understanding was the winner would become the executive chef, so I assume when that happens Andy Cook will become general manager or something (or whatever they want to call him).
If Ramsay was truly looking for someone he could mold into his ideal vision of a head chef, then I think he made the perfect choice. That being said, I do agree that his choice was probably made up episodes ago...
Well, they have to do something to get the chefs out of the construction area, so flying them to the city of another of Ramsay's restaurants seems fair. Also, seeing as how it was the restaurant of their future boss, it was pretty significant.
As an aside, I think the challenges this year have been pretty interesting - especially the recent one involving recreating Chef Ramsay's breakfast (bruch?) dish. I only wish they weren't allowed a community sample dish, and instead had to work from memory - THAT would have been cruel and...
