Good afternoon , you could go with a Yamaha RX-V 463 receiver i think it is around $299 with a small soeaker system from EMP the ECA-4 serie 5.0 $499 and the yamaha Sub YST-FSW100 for $150 Tht should get you a decent system under $1000

You can use CAT 5 for audio and video but you need to add a balun that will balance the signal from the cat 5 to either a digital audio hdmi or components cable.
