I have B&W 804's and I would like to know "How do you determine X-over settings?
What would be the x-over settings for these speakers?
If more than one setting, what are they and what are the differences.

Are you asking about the crossover between the B&W's and your sub? Start at 80hz and listen. Change it to the higher setting and listen. Change it to the setting lower than 80hz and listen. Which one sounds best.

If you are talking about the crossover settings between the drivers on our B&W speakers then that is much more complicated. It is determined by the engineers at B&W based on distortion, driver sensitivity, sound dispertion, etc. and a LOT of measuring.

I was referring to the x-over settings for my menu settings in the Outlaw 990processor.
I have my main speakers set to large @80hz, my center set to small @ 80hz and my surrounds set to small @100hz.

I am not that savvy on the technical aspect. I just want to make sure I am somewhat on target for getting the most out of my 804's

Set your mains to small. That way the sub handles all of the low bass duties. With the woofers on your B&W handling the same frequencies as your sub, there can be cancellation.
