I've stayed at the Luxor, I liked it and the pool. I would not stay in the Pyramid again though. I was on the 22nd floor and my sense of depth was ruined for a week afterwards.

I walked through Mandalay bay and gambled a bit there. I liked it. The pool looks awesome there.

One problem staying at those two was how far they were from everything else. If you want to just stay at those resorts and do stuff there then you are fine, otherwise bring a good pair of broken in walking shoes.

I stayed at the Luxor on my honeymoon.

Nice hotel but honestly it was too far away from anything. So is Mandalay Bay although that was a sweet hotel.

Personally I would stay at the MGM as it is a little farther up the strip and just as nice as the Luxor. Paris would be another suggestion.

Here is a map of the free monorails that will help getting around the strip.

I use this to get around whenever I go to vegas. Plus, there is a bus that will take you out to Rio (I think it parks near Aladdin or somewhere like that...you cant miss it).
There is also some way to get a shuttle out to the Star Trek casino (Hilton?). Its been a while (the star trek exhibit is kinda neat for us trekkers).

My sister would like to know if there are any hotels that have heated pools that are open year-round?

Another question that I would have is, what date are the outdoor pools generally opened for the season? Or are there even any indoor pools?

Being from Michigan, it's hard to tell how things are down there at a certain time of the year.
