The T-5 is a 3" voice coil model. For SPL car guys, that is a "better" sub. For sound quality, the 2.5" coil on the T-6 will have a lower inductance and give you better sound quality. It also has more xmax (maximum linear excursion) than the T-5.
With the T-6 being dual 4 ohm, you can use almost any pro amp to power them. Even the Behringer A-500 and similar models. Nady is another brand that would work. But that EP-2500 you linked to would power a pair of them easily.

I have one of his rebuilt 12's (based on a Diamond Audio sub) in my wife's car. I also have a custom built 15" based on a Konaki 65 pound motor (magnet) and a custom built 18" based on a TC Sound 3HP motor.
