Here are some of my favorites that haven't been mentioned yet.
Toe Jam & Earl (Sega Genesis): simply the best game I've ever played. 2 Player split screen, randomized playfields, wild attacks, getting weak? Just high-five your friend... Where is TJ&E 3?!?
Point Blank (Sony Playstation): Gun gaming bliss. Dozens of different mini-games in the vein of Duck Hunt & Hogan's Alley. Two players compete side-by-side. Beginner level easy enough for kids, Very Hard level will challenge the very best.
Samba De Amigo (Sega Dreamcast): Sure, any non-gamer can pick up the maracas and have a blast, but try to get 100% on the highest level, you'll be sweating up a storm. Strike a pose.
Klax (Atari Lynx): My favorite Tetris-like puzzle game. Who can't love the female seductive "oohs" and "aahhs" rewarding your large chain combinations.
Rampart (Atari Lynx): Great 2 player strategy/Tetris game. Blow up each other castle walls and repair using Tetris pieces.
Pilotwings (N64/SNES): I was seriously addicted to getting gold medals on each level. The SNES graphics were very impressive at the time with the extensive Mode 7
