I know they are digital analog converters, but what do they do? When would you use them and why? Would I want yo use one? I have a Sony DA5ES.

Digital to analog converters are used in many different ways. The oldest and most often used method in the CE industry is for cd players. The transport sends the digital signal (1s,0s) to the d/a converter where it is converted to analog, or music. Things that are in the digital domain cannot be heard so they need to be "converted" to analog. You recevier also uses them for dd and dts etc.

Would I want yo use one?
Outboard? Your receiver, cd, dvd already have them. Outboard upgrades are availablle for cd audio, but are often only implemented by people who are really serious about 2ch audio. It's up to you.
