What are the differences (if any) between these types of wires:

Digital Wire (looks like rca cable)
Component Video (Looks like 3rca)
Subwoofer Cable
Regular RCA cable

I used to think that all these were basically rca cables, but someone recently said that Digital Audio cable requires 75ohm cable instead of 50 ohm.

They all are usually coaxial cables. Although some of the real cheap ones are not. Most ( I stress MOST ) coaxial interconnects that you will purchace will be of the 75 ohm variety. The ones labeled digital are designed to carry the higher frequencies and bandwidth of a digital signal. You can use a digital cable for analog but its not recommended the other way around (although it will usually work)
