For me current cable setup, I have the cable split so that it goes into the Tivo and the other goes into the VCR. This way, I could use the VCR to view programming and record while I'm recording on Tivo. Could I do this with satellite?

No.

The VCR cannot act as a tuner for satellite channels. If you have a dual tuner Tivo you can accomplish what you want with the Tivo and two sat feeds into it.

If you are considering DSS, consider the DTV system with a Directv TiVo, know now as the Directv DVR with TiVo. it record 2 SAT channels at once. they will be available be for Thanksgiving at CC, hopefully. Records DD 5.1, up to 35 hrs at better than best quality. All the features your current TiVo has now.
