What's the difference between Dolby Digital EX and Dolby Digital? Also what's the difference between DTS Matrix
    and DTS Discrete?

Dolby Digital EX has an extra matrixed rear channel recorded into the DD 5.1 mix. It is for systems with rear surround speaker(s) in addition to side surrounds. The channel is matrixed, ("folded" in using audio tricks) into the regular surround channels using a method similar to the front center channel in Pro Logic. DTS Matrix is the DTS version of EX, using a similar matrixed method. DTS Discrete uses a discrete (or separate from the regular surrounds) channel for the rear surround instead of a matrixed channel.

Note - just because something is recorded in DD does not mean it is a 5.1 soundtrack. DD can be used for everything - mono, stereo, Pro Logic and 5.1. DTS is always 5.1. DD EX and DTS M/D are always 5.1 plus the rear channnel.
