I just read the article on Digital Bits concerning the upcoming Sleeping Beauty Special Edition. It is a 2 disc set, loaded with extras, and restored with the same method as Snow White.

QUESTION: How is this different from a "Platinum Edition"? Is this just another example of Disney's inconsistent release strategy?

Sleeping Beauty is not one of their "top ten" therefore is not "Platinum". Basically SB rehashes the LD release, while if it were Platinum there'd be more to it

Well, I would dispute that. There'd be new supplements certainly (causing some of the older ones to be dropped). But based on the last platinum ("Beauty and the Beast") they'd be poor subsitutes for the original.

The Beauty and the Beast set was a major disappointment supplement wise.

Hmm, just read the article a little closer. It looks like "Sleeping Beauty" also does NOT come with an audio commentary track.

As to it being an LD rehash - So there won't be any appreciable raise in quality? Does this make it equivalent to the some of the "Gold Collection" Disney titles (Peter Pan, etc)?

It's anamorphic, so there will obviously be an improvement in transfer quality (if it were rehashed from the LD, it'd be non-anamorphic)
