I let my jerky cook a little too long overnight. Is it possible to re-moisten it slightly?

Would anyone like to offer up their favorite jerky recipes and meats while I'm thinking about it?

I would have to say no.
Bacon is cured. Jerky is dried meat. Two different processes completely
