I've been meaning to go vegan for some time, and so I went ahead and bit the bullet, and I've been vegan for 4 days now. On top of that, I added a rather tough stipulation-nothing but fruits and vegetables. I'm in a competition with a friend to see who can stay on the diet the longest, and if I don't get some good meals, I'm gonna lose! There are a few gray areas-condiments and seasonings are allowed, but they should contain minimal to no calories. Beans are allowed, but potatoes are not. Canned vegetables are allowed, as long as they don't contain too many additives. So, I've been living off of olives and popcorn I pop myself (couldn't find any locally that matched the rules). I have spaghetti sauce that's okay, and was thinking of turning that into something, but without pasta or meatballs, I don't know what it could be. I've also been thinking of dehydrating vegetables to eat like chips (maybe with some guacamole?) but have yet to come up with something that act as a chip. So, any ideas? Any soups, casseroles, or things of that nature? I need help!
