I suggest you watch:
T3 rise of the machines(great picture, outstanding audio!)
Pirates of the Caribean (same as above...the LFE will kill your sub)
Nemo, duh
bad boys 2
These, in my opinion, are the best audio/video demos available
if it's just sound, star wars tpm will kick your systems ass...same with aotc
if it's just picture, toy story or monsters inc look GREAT

Can people give specific scenes to show when I don't have time to watch a whole movie?

I just got a new projector (PLV-70) and have been doing the demo thing myself for a while. I've always had good sound but now Im really looking into movies with a good picture as well.
For picture and sound here are a few of my favorite scenes...
Nemo is about as colorful as it gets and the sound is decent too. The first few scenes are great.
T3 and Matrix Reloaded for there chase scenes sound and picture look sweet.
I like the Platnum edition of Stargate when they first go through the gate.

I christened mine with Local Hero - mono sound it looked and sounded better than I ever saw or heard it
