That depends on the size of one's display and the viewing distance. If someone is sitting further away, indeed the finer resolution might be lost to the eye (in fact: be unnecessary).

Another problem is the fact that many "1080p" TV-sets process the images in a manner that reduces the difference between 720 and 1080 lines of vertical resolution in practice.

One reason is the refresh rates. Currently 1080p specifications allow for a maximum of 30 fps while 720p allows for 60 fps. If you do the math you'll see that this ends up much closer for number of pixels per second.

Now I have also read that most 1080p displays can handle higher fps, but I doubt media will be produced with them until the ATSC standard allows for 60fps at 1080p.

Once you get 60fps on 1080p then there should be a more noticable difference -- on the right screen at the right distance of course.
