I have a simple audio system based on a set of high-end "computer" speakers and a sub, but it gets terrible interference from iPhones. I gather that other GSM phones will do the same but I have not bothered testing.

Anyway, the newer desk speakers I checked still get this interference! Are the nicer receiver / shelf speakers susceptible to this? Do I need something specifically designed and advertised as a certain type of shielded or what?

yes, the system needs to be iPhone compatible. or just turn it on to "airplane mode" then you won't get those weird beeps/interference.

Large portions of the audio system are analog, and are susceptible to the burst-mode transmissions of things like iPhones, Blackberries, and other cellular devices. Probably even Kindals and things like that, though most people would be surprised that their e-book reader is "noisy."

Doing pro sound reinforcement, we run into this sort of thing all too often.

Realistically, the best thing you can do is keep the cell-devices away from the analog circuits, 'cause any time the cell device transmitts, it generates tremendous noise-spikes in the local area that are difficult to shield against.
