Hello, this may not be a true Home Theater question. My home had a NuTone intercom system what’s remaining are 3 round, in-ceiling speakers (one in each bedroom, with each speaker is a volume control on the wall. All the wiring all come together in one location (kitchen Pantry). Can I hook the speakers up to something like a Wi-Fi/Bluetooth amplifier so that I can play music in the room from my phone? If there is such a thing, any recommendations?

Welcome. I can see how you would want to investigate this possibility but, trust me, it's not feasible. Even if it were, speakers like these were never intended for music and would sound terrible. You'll be much happier with a simple Google Mini or similar for each room. These are entry level so there are better options. Buy the best version you can afford based on your budget.
