Emmylou Harris and Daniel Lanois' cover of the McGarrigle sisters' Goin' Back to Harlan.

Moodswings' cover of Bob Marley's Redemption Song.

...and many others I can't remember offhand.

Eva Cassidy has made magic from dozens of covers. A few of her very best are Paul Simon's "Kathy's Song", Sting's "Fields of Gold" (never liked it until she did it), Weiss and Thiele's "What a Wonderful World," and my personal favorite, Curtis Mayfield's "People Get Ready."

The Band's "The Weight" may be my favorite song of all time, and it's been covered over and over. Shannon Curfman's cover, from her album "Loud Guitars, Deep Suspicions" is my favorite, relatively recent cover (what happened to her, by the way?).
