Because of my signature advocating Roy Disney, I don't expect anyone to take the following statement seriously, but I consider Roy's Fantasia/2000 to be one of *the* finest DVDs ever made in terms of audio. Fantasia/2000 is a reference disc for home theater. It just went Out-Of-Print, too, so if you want it, you better get it while you can still find it. Otherwise, get ready to pay e*bay prices for it.

Since we're not limiting ourselves to DVDs, I would most definitely recommend the dts audio version of Steely Dan's "Gaucho" Album. I love that mix.
I'm also going to reccomend a DVD-video title that probably everyone here will hate, but i do feel it has a great mix: Universal's "Sgt. Pepper." It does have a lot of discrete multi-channel stuff throughout the movie, there is some great subwoofer work on the "Oh, Darling" sequence.
Ok folks, now I'm ready for my fatal stoning ;)
