Do I have to have a grid to do service level convergence on my Toshiba 42H81? Also, is there a recommended number of hours to use the display before doing this convergence?

No recommended time ... do it now ... do it tomorrow ... do it next week ... no limit ... any time you want, it is your TV.

Just limit the amount of time in there ... prolonged exposure will burn the grids into the crt.

Until your set has over 100-hours on it, the convergence is likely to drift. There's no harm in adjusting the convergence before the break in period is complete, but you'll likely have to touch it up pretty frequently for the first month or so.
