About the Optoma H31, on projectorcentral.com for a 12 foot throw they calculate the width of the picture to be 72". But on Optoma's website, they list a range from 72" minimum up to 87" maximum screen width, using the zoom feature I assume. My question is, if I wanted to use the zoom to get that max 87" size, would the quality degrade?

Probably no loss of quality, it depends on the quality of the pojector lens. I'm sure we are talking about optical zoom here . It doesn't make sense to leave pixel areas unused on the internal display chips while the user makes up his mind how to adjust the projector throw.
