I'm pretty new in Home Theater forum and I don't understand how you can choose weather receiver's or DVD player's DACs are used. How do I determine which DACs are better and how do I choose between them. I always thought that players decode the signals and receiver amplifies them. Sorry, if that's a naive question, I just don't see any threads nor publications on that subject.

If you connect the player with a digital cable, the receiver/processor's dacs will convert the signal. If you use analog stereo cables to connect your player, then the player is doing the processing.
It is hard to know which will sound best until you listen.
