Since 99% of the pork sold in the US market is very lean I wouldn't even bother with a marinade. I would soak them in some sort of brine instead.

i tried brining once (followed some recipe), but it didn't turn out very tasty. it just tasted like, well....salt! :rolleyes::)

i'm sure i did something wrong, but i haven't tried it since.
