Are balanced outputs always the better connection between amp and preamp? Is there a large difference between the sound you get from either connection?

The better connection? Yes, they are absolutely the better connection, because both TRS and XLR connectors are far superior to RCAs, from a structural and construction standpoint.

Balanced signals offer better noise-rejection properties than unbalanced, but generally this benefit is recognized only with the extremely long cable runs you see in pro audio applications. With the relatively short runs used in home audio, this point (and benefit) is largely moot.

As far as the sound, that’s debatable, but I’d say that largely depends on the quality of your system and how well you are able to hear and recognize subtle differences.
