I'm setting up my first EX/ES system. What's the best for back surround? I'm using dipoles for the sides.

I would match your surrounds. If you are just using a single speaker...get a dipolar as it will broaden the rear soundstage. If you plan on using two back surrounds...direct radiators should work comparably well as dipolars. But again try to match your side surrounds (manufacturer etc.)
