MarkHastings has it right. In fact, nutritionists don't even consider the potatoe a vegetable any more. It's a starch, like other grains or rice. A tuber. It raises your blood sugar level, which if unused, the body stores as fat. Potatoes, once thought of as a very healthy part of the diet, are now almost considered to be like most other simple sugars. Shame too, 'cause I LOVE french fries. Fortunately I only eat them about every 2 weeks.
