Our new room which will be used for HT & Music listening will have a 9'0" ceiling versus the rest of the house which has standard 8' ceilings. I was just wondering if I should be doing anything during construction and how this new room's extra "headroom" will affect sound quality.

An extra foot isn't really going to affect your sound.
If the ceilings were vaulted or made of some "different" material, that might be a problem, but just an extra foot of head room....that's going to add some cubic footage to the room and probably cause you to have to run your volume a big higher to achieve a preferred listening level, but I don't think it's something you have to "plan" for.
How's that for a run-on sentence?
